Private head chef of UHNW family. Responsible for daily purchases of fresh ingredients, preparing contemporary and classic food and deserts. The main objective is to focus on healthy food(gluten, sugar, dairy free)
Pre-opening, kitchen and menu were designed and created from scratch by me. Hiring the whole team, training and teaching the standards.
Developing hotel western kitchen. Creating new menu, training the staff to prepare it. Daily ordering and stock control.
Taking care of one section for 6 month then rotating, every sauce and dish make daily fresh and from scratch, ordering products, taking trainings and lessons
Professional training every 6 month, training for HACCP and Safe serving, both experiences are obtained: Huge production banquets, and a la minute service.
