Pre-opening duties:
• Attending and taking ownership of meetings with the project management/operations development team to ensure all aspects of the unit are operationally viable and as per requested specification.
• Taking ownership of all aspects of procurement for front and back of house restaurant operations, recruitment, selection and training for restaurant.
• Responsible for maintaining pre-opening budgets and forecasted P&L
• Implementing best practice benchmarks with regards to front and back of house service.
• Ownership and development of Standard Operating Procedures
• Leading and developing sales and marketing plan (12 months) in conjunction with the Sales and Marketing team.
Post opening duties:
• Oversee day to day running of all operations both BOH and FOH.
• Ongoing responsibility for maintaining budgets and achieving sales forecast for the restaurant.
• Delivery of the Sales and Marketing plan in conjunction with the relevant teams.
• Ensuring impeccable service at all times ensuring that Standard Operating Procedures are met.
• Establishing and maintaining effective employee relations.
• Keeping up to date with trends, systems, practices and equipment in food and beverage preparation and service in the restaurant field through visits.
• Leading performance management and appraisals on all team members.
Ensuring all hygiene procedures & standards are maintained.

Brand Management of multi-concepts including sales & profitability of each of the restaurants and brands
Conducting in-depth consumer analysis to determine the image/demand of a brand.

People management - overseeing the individual restaurants general managers and providing support and direction
Leading a team of 150+ employees and instilling a highly motivated work culture with a strong emphasis on customer service & sales / standards
• Ensuring the brand standards are adhered to and exceeded. Setting SOP and implementing new processes / procedures
Regular site visits to ensure the customer service experience is always at an exceptional standard
Oversee the Health, safety & hygiene of each store
Working closely with the CFO, VP’s of Operations, IT Manager & HR department
Profit & Loss responsibility.
Controlling costs in-line with department objectives and business plans.
Utilizing all resources cost effectively
Delivering OPERATIONAL EXCELLENCE for Group’s Restaurants wherever they open, ensuring that efficiencies and logistics are established, working as a direct support liaison to outlet supervisors and brand chefs to achieve brand standards.
Managing all aspects of the business so as to deliver profitable growth across each outlet
Tracking the financial performance of the business through P&L assessment and to report KPIs and their discrepancies in conjunction with a corrective plan
Recruiting, training and developing a team which passionately delivers customer service excellence
Communicating target customer groups through effective marketing initiatives
Working with Outlet Managers and Chefs to ensure that menus are continuously upgraded and that the best products are procured in terms of quality, delivery times and cost
Providing a report on the state of business at set times as laid out by the Finance Dept.
Supporting outlet managers/supervisors in the mid and end of year Budget appraisal in terms of attaining targets and setting improved targets for the following year
Controlling and maintaining payroll costs in line with business fluctuations
Assisting, training and motivating staff in all areas front and back of operations, making them multi-tasked operators
