Making individual recipe costing, menu costing & updating on periodic basis. • Make customized menu costing as per client requirements. • Make yearly consumption reports for F&B items. • Ensure cost cutting when excess orders are placed for F&B items. • Make individual estimated and actual F&B costing. • Send monthly inventory report to line manager. • Audit non-moving and expired items on periodic basis. • Prepare readymade items costing. • Perform competitor menu costing on periodic basis. • Check staff meal consumption and costing on daily basis. • Preparation of below reports on monthly basis; • Food cost report for kitchen. • Beverage cost report for banqueting. • F&B final report for finance. • Master costing sheet and summary. • Check and approve cash purchasing for F&B items. • Maintain records of all the documentation from all departments for menu costing as per revenue management SOPs. • Assist in market research three times per year (January, May, September) for the existing and proposed pricing to ensure JRCC margins are competitive and aligned with hospitality market. • Work on minimizing the kitchen, warehouse and banqueting month end closing inventory. • 18 years of experience in the Cost management ( F&B controls- General ControlsEngineering Controls ) • Construction and Contracting experience. • Responsible to control and monitor project total expenditure including verifying and checking of invoices and claims from suppliers, vendors and subcontractors to ensure that all project expenditures are captured and properly recorded • Provide planning and cost controlling support for all projects which includes variation reporting, monitoring of milestone progress to the preparation of customer billing processes, etc • Perform and manage project activity scheduling and monitoring • Prepare monthly report for the monitoring on a daily basis and register all downtime, consumptions and relating to the project promptly to the project manager and management. • Coordinate and work with the project management team to resolve project issues to ensure the delivery/completion of the project work.
