1/ Responsible for sampling & food scan tests (fat, protein, ash, moisture, salt & collagen).
2/Conduct Swabs tests & Sensory evaluation.
3/ Conduct inspection and analysis of RM(confirm the delivery free from hazards, COA meet the specification & it's from approved supplier).
4/ Responsible for sanitation, GMP & Audit inspection.
5/ Checked & change over clearance of equipments, tools & area and verify the general cleaning .
6/ Responsible for monitoring CCP & in process control of SFG( poly clips, cold cuts, thawing, defrosting, tumbler, filling, Breading & forming) and FG and ensure its meet internal specification (batches, core temp, pH, sensory evaluation, dimensions, weight increase and lost....etc) and customer requirements.
7/ Preform delivery/dispatch records ( truck hygiene, temperature, batch number details, parameters).

1/ Conducts water tests ( TDS, Ph & Chlorine) & ATP Hygiene morning.
2/ Conduct sensory evaluation for the product to meet customer requirements.
3/ Monitoring the receiving of raw materials & finished goods ( RM & FG Checklist) & ensure meets company specifications.
4/ Plan, mange and control all production activities as per Food safety standards (HACCP & ISO22000).
5/ Conduct internal audit for HACCP and ISO22000.
6/ Plan, organize and prepare auditing plan for monthly GMP, External lab testing, Pest control, Internal and External calibration, Training, Traceability, Recalls, Supplier questionnaire...etc).
7/ Perform CCP monitoring, General Cleaning and sanitation, & enforces personal hygiene practice and food safety program.
8/ Prepare Finished product specifications & check FG measurements on regular basis.
9/ Provide food safety standards training to new employees and retrain for old staff.
10/ Contact and communicate with third party companies ( Pest control, Calibration, Waste disposable, Suppliers, Customer and legal organization /municipal governments).
11/ Investigates customer complains and non conformance incidents and find root cause, corrective and preventive action.
12/ Measures the quality KPI’s on monthly basis.
13/ Follow and Control medical screening, Ensure all the employees in good health and ensure they have valid health card .
14/ Revise the process manual with help of team.
15/ Review, Manage & storage of HACCP & ISO 22000 documents and updated on regular basis.

1/ Sampling and conduct testing plan.
2/ Microbiological analysis for Finished goods, Raw materials, water, ice, environmental testing for air and swabs.
3/ Manage stock and inventory of laboratory & coordinate with supplier to maintain stock .
4/ Familiar with lab techniques, microbiological criteria and lab instruments.

6/ Ensures maintenance of good hygiene practices (GHP) at factory (personal hygiene /PPE’s/ process / products).
7/ Conduct food safety seminar/training for the staffs .

9/ Conduct in house GMP Inspection .
10/ Perform CCP monitoring, PPE’s checklist.
11/ Ensuring the process compliances ISO22000 & BRC standards (waste flow, hazard analysis, allergen and batch control).
12/ Assisting with auditing & prepare reports .
