•Ensure that all associates have a complete understanding of and adhere to the Company’s policy relating to Employee Rules and Regulations, Fire, Hygiene, Health & Safety, HACCP.
•Maintenance of all bakery equipment and utensils.
•Ensure consistency, quality, standard and presentation of all products, which are prepared in the bakery kitchen, at all times.
•The proper, efficient and profitable functioning of the bakery kitchen.
•In charge of cleanliness and hygiene for all working areas of the bakery kitchen. Supervise and participate in the work of his/her subordinates, remaining fair and impartial at all times.
•Develop the associates he/she has to guide and motivate, in addition to conducting theoretical and on the job training at all times.
•Maintain good communication, cooperation and assistance within the bakery kitchen and related departments, conducting him/herself courteously and professionally.
•Ensure that all associates report for duty punctually wearing the correct uniform at all times.
•Assist in the building of an efficient team of associates by taking an active interest in their welfare, safety and development.
•Boost, develop and maintain staff morale within the bakery kitchen.
•Ensure continuous improvement and maintenance of all production processes and their preparations.
•Attend factory meetings when and where scheduled.
•Ensure that the Operational Budget is strictly adhered to and that all costs are strictly controlled.
•Keep close supervision on overtime rendered, whether required or not.
•Attend to all production concerned problems, customer complaints, inquiries and requests personally, when and where necessary.
•Schedule working hours of all his/her associates, taking into consideration volume of business, but being careful at all times to conserve labour costs.
•Assign in detail specific duties to all associates under his/her supervision and instruct them in their work.
•Work closely with the Chief Steward, insisting on meticulous cleanliness and orderliness in the bakery kitchen.
•Checks the quality and quantity of all food ordered (fresh or frozen) daily. He/she must keep a close watch on all food materials used, to eliminate waste and spoilage.
•Responsible for all food that is prepared in his/her kitchen. Ensure that all products are uniform and portion size has adhered to.
•Ensure that soiled or damaged utensils are not put into use, training his/her subordinates to do likewise.
•Ensure that all phases of his/her kitchen function properly in his/her absence, by allowing the Assistant to assume full responsibilities.
•Ensure that maintenance requirements are promptly forwarded under factory policy. Follow up on maintenance requests till complete. Any discrepancies to be noted in the logbook and the Administration Office to be informed immediately.
•Observe the fine line between friendliness and undue familiarity, thus keeping the respect of his/her employees.
•Aware that his/her Superiors for future assignments, appraisals, reports, transfer and bonus will closely monitor his/her performance.
•Perform other assigned duties that contribute to the Company's mission and objectives.
