control the cost of portions in keeping with the budget
control the food hygiene and sanitation
control waiting staff
train staff (all staff in the kitchen )(quality
, presentation, hygiene, hsp.)
create new menus when the hotel requires
change ideas and listen to guests comments
keep the kitchen clean and ready for inspection at any time
control the products, make sure they have not expired
control the stewards work
create courses for the staff to enhance service
control receiving area
