Brand-chef Basem Zain Working experience: I work as chief and brand-chef for more than 18 years in Middle East, Mediterranean, CIS countries and Russia. My specialization is start-ups of any format: restaurants, cafes, food trucks or small food corners. List of my service includes:  Restaurant concept and menu creation  Special menu creation (season, branch, party)  Kitchen equipment purchase  Kitchen staff recruitment and training  Special events, cooking classes and chef’s table organization  Kitchen work coordination as a brand-chief: operational control online, training of the  personnel and promo campaigns in mass media Cuisines I work with:  Arabic: Lebanese, Syrian, Saudi Arabia, Egypt, Moroccan, OAE  Mediterranean: Italian, Maltese  Russian cuisine For the last 14 years create menu and organize work of 14 projects in Russia and CIS counties. Here is a brief overview of some projects and my role in them: Lebanese restaurant Mr. Livanets Moscow, One of the first restaurants of Lebanese cuisine in Moscow and Russia. A turnkey project which I guided for more than 4 years. The restaurant was several time nominated for Russia restaurant award of Timeout magazine. Humusia Abu-Gosh Moscow, Modern Araby & Mediterranean cuisine concept. A really challenging tiny kitchen (8 sq.m.) space planning for a full cycle cooking process. Now I develop Abu-Gosh as s brand-chef and we already have 2 restaurants in Moscow. Aba Bowl Bar Small café with mono menu consists of bowls. Modern Mediterranean cuisine customized menu. Dip with me Moscow, A chain of small restaurants with Arabic menu consists of set of dips and starters. Now there are 3 restaurant and we plan to grow into franchising chain all over the Russia Topstretching Club Russia, Dubai, Abu-Dhabi, Bali Closed Club of a famous sport chain Topstretching. I am a Brand chef and create all special menu of several types for its members, make video recipes and participate in special online and offline events. Food truck El Burritos Moscow Mexican cuisine food truck turnkey project. Space food for Roscosmos Special menu for the first OAE space tourist on the International Space Station consists of traditional Arabic dishes. 5* hotel of Moscow cooperation: Four Seasons Moscow and National Branches and special menu with Saudi Arabia traditional dishes for the official coming of the King of Saudi Arabia
