Full responsibility for the manufacturing operation of the largest
Plant Bakery in the Middle East, responsible for 10 direct reports .
and 495 indirect. This is a brand new plant with
State of the art equipment, which I played a major part in getting
Up and running. I have developed a team of production and
Packing personnel to facilitate production from 5 manufacturing
Plants, using in excess of 100 tonnes of flour per day.
I have implemented Lean Manufacturing methods to increase
Productivity and we are currently seeing increases of around 11%
With kilo's per man hour at 50 kg per head. Production was
Increased on the Bread Plant from 5, 000 loaves per hour to 6, 200.
By capitol expenditure i increased the Roll Plant output by 50%,
And on the Pastry Plant output was raised by 8, 000 pieces per hour.
Turnover of the Factory was 40 Million per annum. I set the yearly
Budgets for the site, and operated to strict KPI'S on Health & Safety, Quality, Efficiencies/OEE, Labour, Materials usage, Waste
And Budgets. I worked to grade A standards on AIB and ISO
22000, ensuring the factory implemented a rigorous HACCP Plan.
I also worked closely with the Planning department to ensure
Optimum plans were issued to the factory, constantly striving for 100% attainment. I also deputised for the Site Manager. Major
Achievements with Almarai was commissioning the whole Factory
And introducing the Sponge and Dough system to the Saudi market
This resulting in a 33% increase in white sliced bread sales.

Line efficiencies and wastage. By redevelopment of a Sponge
Recipe and process wastage was reduced by 50%.

Engineering functions on site were under my control as were
Quality and Transport. I oversaw the installation of major
Capitol equipment, and the successful implementation of Efsis
To higher grade accreditation.
Working with the NPD Department i was instrumental in
Products for Weight Watches which resulted in 800, 000 pounds
Of extra business per year, also the development of All Butter
Pastry Mince Pies for a top retailer of which we produced 13
Million packets for in one year. A major success was to formulate
A recipe and process to produce in house produced Fondant which
Resulted in a 5, 000 pounds per week saving on buying ready made.
Also by altering the process we saved 50% on wastage on largest
Production plant.
