The dissertation project is specifically examining “Post-harvest handling of coffee beans grown on the big islands of Hawaii Kona coffee belt area”. The object of the study is reducing the impact of potential mold presents leading to mycotoxin contamination in the drying stage.
• Implemented Food Safety Management System (FSMS) (ISO 22000)
• Managed laboratory staff and manufacturing facilities.
• Performed HACCP facility activity coordination on a regular basis.
• Investigated and resolved a variety of regulatory queries and issues.
• Supervised third-party facility inspections and follow-up actions.
• Assisted in leading food safety and quality training programs.
The thesis is based on developing environmental sampling and monitoring plans. The objective of this study was to develop microbiological environmental sampling plans based on the answers to a series of questions related to product hazards, processing risks and controls, and knowledge of appropriate microbiological sampling and testing protocols.
• Member of the food safety team FSMS, ISO 22000. Participated in the HACCP team study and QMS, implementing the CCP, OPRP & PRP in line.
• Implement the zoning concept (Hygiene requirement in the process line, cleaning and disinfecting requirement).
• Following up the GMP activity in the Factory (Production line, WH, Surrounding). Daily inspection of the factory premises, production line, and WH.
• Handling the Micro lab activity (pathogen monitoring plan for EB, S, etc.).
Corresponded with future clients, regarding projects, quotes and schedules and deliveries. Handled key account for local and international market customers.
Working the quality control department, inspected both galvanizing and fabrication sections, update all the records related to the job; participate in the third party audit.
