• Coordinates and supervises all activities that are related with food storage.
• Schedule all stewards, pot washers, closers and overnight cleaners.
• Train all stewarding staff to perform duties above the standard.
• Assure compliance with health department standers.
• Communicate with the engineering department to make sure that all the equipments are maintained in a timely manner.
• Assure compliance with all hygiene standards.
• Supervise and maintain the sanitation of kitchen, storerooms, hallways and equipment.
• Work with the Chef, F&B director and director of catering to anticipate equipment needs.
• Perform all steward duties.
• Ensure all the outlets have sufficient equipment to do a daily operation.
• Order and control inventory of all cleaning compounds.
• Take physical inventory of china, glass, silver, paper and cleaning suppliers.
• Control a breakage as minimize.
• Ensuring regular communication between team members’ thought out the year, thought meetings, training sessions, newsletters and email.
