DUTIES AND RESPONSIBILITIES:

Shares responsibility with the Chef de Partie for the efficient operation of the section including food preparation, cooking, presentation, supervision, training and a close working liaison with the other sections. For the proper handling of fixtures and equipment. Fully responsible for the operation of the section in the absence of the Chef de Partie.

DUTIES AND RESPONSIBILITIES:

•Assists in supervising as well as all preparing of food items.
•Checks function sheets, daily Menus, Buffet plans.
•Assists the Chef de Partie to ensure freshness and suitability of products and that those are stored properly.
•Observes health and hygiene regulations and determines that the section is kept clean and hygienic.
•Also responsible for my own hygiene as well as others.
•Replace the Chef de Partie during his absence and also overtakes his duties during this time.
•Handling carefully kitchen equipment to keep them in good working conditions.
•Attends training sessions.
•Corrects producing errors/ methods as found necessary.
•Ensures food is produced according the daily production list.
•Ensures that the established cost control policy is followed.
•Produce all products according existing recipes.
•Dishes all cooked items according displayed pictures and instructions.
•Reports missing products to my supervisor.
•Works in co-operation with other sections.
•Shares responsibility with the Chef de Partie for the supervision and training of Commis Chefs / Apprentices / Trainees.
•Aware of the hotel fire, safety, Health & Hygiene regulations and also how to operate the kitchen firefighting equipment.
•Perform duties common to all supervisors and other duties as may be assigned.
