I have more than 26 year experience in the food catering services.
18.5 years in airlines catering services
i'm currently having 20 sites under supervision with more than 300 staff working and me with different position category
the biggest customer is Aramco and drilling companies
• Over all monetary responsibility for outsourced catering, housekeeping and laundry services
• Monitoring food hygiene and safety standards, carrying out risk assessments and maintaining high standard
• Managing more than 14 remote area rig location staffs such as allocating the supervisor task, Camp Manager task, chef presentation, kitchen staff, and service team of over 200 to provide stellar dining experiences to high-profile patron
• Overseeing administrative tasks, including medical, training, equipment and food ordering, maintenance, and other needs as they arise
• Plan menus according to the specific interests of the customers and provide them with a feasibility report
• Monitor the quality of food items and beverages and ensure that a sufficient amount of both is available during events
• Administering all catering functions from conceptualization of menu to implementation of same
• Reviewing, correcting and approving the item requisition and ensuring all ordered items delivered from central store
• Ensuring and controlling the Food cost control and maintained based on budget limitation
• Strongly involving on recruitement process and Interviewing the candidate after shortlisted by HR department
• Focusing on staff training and motivating them for performing the taks in well manner
• Preparing catering rig operation yearly Budget and updating as required by management
• Ensuring that health and safety regulations are strictly followed, recorded and archived
• Maintaining financial and administrative records.
• Visiting and inspecting to all sites in remote location at less once in the month for ensuring the standards and procedures are followed and maintained along with employees adhere to HACCP, FDA and safety regulations and compliance with company policies and procedures..
• Preparing vacation plan, and the staff appraisals on yearly basis.
• Conducts inventory of products to ensure proper usage and minimization of waste..
• Ensures compliance with company Wage & Hour policy, including ensuring employees get the rest & meal breaks and ensuring company processes followed.
• Responsible for employee retention and reducing employee turnover.
• Reviewing and ensuring union represented employees’ pay rates are correct based on wage scales and seniority.
• Ensuring employee complete all company required training including but not limited to Service Safe.
• Ensuring and achieving 100% for my KPI.
• Monitoring camp maintenance ensuring schedules are met including kitchen equipment, electrical, storage area and accommodation
• Drive process improvements in automation of financial reporting through close collaboration
• Undertake responsibilities of verifying the captured cost in monthly P&L in part of Revenue, COGS, and OPEX (i.e. Personnel, facility, transport, administration, and depreciation amortization) and providing the variances commentary to General Manager
• Held accountability for preparing and submitting employee productivity and KPI’s report to Senior Management
