November 2007-31 July 2013: General Manager at Café Kima, Jeffreys Bay
Duties include day to day running of the restaurant. Creating the menu, food & beverage costing, cash ups, controlling cash flow (petty cash), stock control, food & beverage management, staff management (hiring, contracts, labor relations, disciplinary hearings, rosters, pay roll etc), catering for functions (including weddings at The Ferry Hotel, a sister company), function & wedding menu creating and planning, programming menus on Micros POS system, programming staff on Micros POS system

November 2006-October 2007: Manager at Die Koffiepot, Jeffreys Bay
General running of the shop and staff, menu planning, kitchen training, cash ups, ordering and receiving.

September 2005-September 2006: Waiter, food bus and cashier at The River Café, Hammersmith, London
Duties included prepping of food before shift. (Waiters played an integral part in preparing the food every day.) Cash ups. Controlling the food pass with the chef. The menu changed twice a day & high level of product knowledge was expected from floor staff.
The River Café is a world renowned restaurant for its Italian food with Chefs Rose Grey (passed) & Ruth Rogers at the helm.
