Monitoring the food & beverage cost at daily basis & take necessary actions to control/reduce the cost.
Recipe costing for all the items & recommending the suggested prices to finalize the menu.
Generating the price variance reports on weekly basis & negotiating the prices with the vendors on regular basis.
Working closely with the Purchasing and Supply Chain teams to monitor day to day routines - requisitions,
purchase orders, invoices & the current accurate inventory.
Maximize Sales and profitability by analyzing with respect to the different categories among different locations.
Coordinating with the outlet managers & chefs on various concerns with regards to recipes, Item & their quality.
Maintaining price Integrity by monitoring the price Increases, price decreases, & promotions.
Analysis of effectiveness of the promotions in achieving the targeted sales with the required margin, provide
them the required inputs such as margin%, possible offered prices & promotion categories.
Maintain optimum inventory levels for the promotion categories as per the analysis & real time store
requirement.
Generating the sales on daily basis -outlet wise & verifying it with covers received & handling any mismatches.
Surprise visits to outlets to randomly check the inventory & monitor the stock taking activity at the month end.
Identifying the weakness in controls implemented at the outlets & provide them suggestions for improvements.
Ensuring effective in season management across the outlets by stock balancing, markdown management, stock
analysis, etc.
Securing the quality and timely delivery of goods and components especially best-selling items/seasonal
items/promotional items, this has the major impact on sales.
Assisting the team with the new items, new plans, new promotions, etc., for the day to day operations.
Team work, Time management and Communication / Co-ordination among the staff are essential in maintaining
a reputation of work excellence & productivity.
Takes initiative to explore and suggest new approaches that may impact quality and/or quantity of job
performance and organizational effectiveness, innovative.
Analyzing the requisitions, acquiring quotations and generation of the Purchase Order based on the requirement.
Responsible for maintaining the stock in the Sub-Inventories and also the transactions between them. Controlling
stock levels based on the sales and the season.
Coordinating with Purchase & Stores Departments for regular procurement of material with right amount of
quantity at the right cost.
Actively participating & monitoring the stock taking activities on the regular basis at the month ends.
