1. 8 Meal Services a Day to the InPatients
2. Liquid Diets for InPatients - every 2 hours
3. Staff Cafetaria providing Breakfast, Lunch, Dinner, Snacks and
Midnight Snacks to the staff.
4. Food Court providing Meal services from 7am to 1030 pm to the
Visitors of the Hospital.
5. Room Service for the patients and their relatives/visitors.
6. Meal Services for the OPD patients of Dialysis, Oncology and the
Executive Health Checkup customers.

As an Operations Manager, my main responsibilities were:-

a) To streamline the Operations Division to the last detail.
b) Co-ordinate with the related departments( mainly Production,
F&B Controls & Stores ) involved in activities pertaining to
Flight Catering
c) Co-ordinate with the Customer Airline for effective and efficient
Workflow/Equipment Flow/Controls.
d) Participation in Customer Menu Presentations.
e) Handling of the flights ( Offloading/Washing/Loading)
f) Preparation of the flights as per the standards given by the
Customer airlines.
g) Ensure that “Standard Operating Procedures” are available in
the departments and followed.
h) Ensure that not a single flight is delayed due to Catering.

ACHIEVEMENTS:
 Re-organized the entire structure of the Operations
department with the purpose of making it a more efficient and
responsive to Customer requirements.
 Actively participated as a member of the committee in
acquiring the HACCP, HALAL & ISO 9001:2000 certification for
the Company.
 Re-organized the entire Billing process at the Operational
level by programming a Database for this purpose for Indian
Airlines and Air India.

CROISSANTS is a sub-division of Ambassador Skychef. It is a Brand Name outlet which has been in existence since 1986. It deals with the sale of Snack food Items located in shops within Mumbai. The shops are taken on under a Franchisee agreement. All the items are produced at the Central Kitchen of the Flight Kitchen, and transported to the shops.

The items on sale are;
1. Normal, Premium & Made-to-order CAKES
2. PASTRIES - Normal & Premium
3. Plain & Stuffed CROISSANTS
4. SANDWICHES
5. PUFFS & STRUDDLES
6. CHOCOLATES
7. SALADS
8. BEVERAGES
9. SPECIAL ITEMS during FESTIVALS.

Am the overall incharge of the CROISSANTS division, reporting directly to the General Manager of the Flight Kitchen. As overall incharge, my main responsibilities were:-

a) Operations & Logistics of the Outlets.
b) Looking for ideal locations for new Outlets.
c) Maintaining Proper Licenses for Operating the outlets.
d) Finalising the Contract and Operating details with the
Franchisee.
e) Personnel requirement for the Division.
f) Budgetting of the Division.

We are also supplying Food Items to CAFÉ COFFEE DAY. Cafe Coffee Day is one of the leading Chain of Café’s located all over India. In Mumbai, they are presently operating 110 outlets, of which CROISSANTS supplies to 60 of their outlets

ACHIEVEMENTS:
 Revised the entire List of Snack/Beverage items available for
sale in the shops. Special items are made available for sale
during various festivals in India such as, FATHER’S DAY,
MOTHERS’ DAY, DIWALI, CHRISTMAS, NEW YEAR, & EASTER

• Reduced Personnel Costs by 30 percent by re-organizing

• Setup procedures to locate and control the Fixed Assets
allocated within the department.
• Setup the processes of Budgeting, Forecasting, Ordering

from a mere 5 percent to 20 percent in the very first year.
• Received Appreciation letters/awards for the successful
operations of various Projects undertaken.
