Leading the Quality Assurance and New Product Development function in Olayan Food Division in Middle East and North African region for all brands (Burger King, Texas Chicken, Buffalo Wild Wings, Turnstone Pizza)
• Lead the food safety, food quality regulatory compliance in Olayan Food Division restaurants and Distribution Centers throughout MENA region and will work with cross-functional teams to drive performance.
• Lead the new product development process for all brands in all markets as required.
• First contact for all food safety, quality and regulatory compliance questions or issues in Olayan Restaurants; Utilizes multiple data streams to assess risk, monitor distributor and restaurant food safety and quality compliance with Franchisor Brand Standards (1st and 3rd party audits, Health Agency Reports, Pest Control Reports, Customer feedback); takes appropriate actions, as needed, to ensure compliance with same Standard; Conducts Food Safety Assessments as appropriate.
• Works with International Leadership Team and regional QA teams to provide food safety and Quality support, remedying food safety and quality risks and complaints as needed; provides direct food safety education and regulatory insights to all Olayan operations leadership.
• Partners with Operations Managers to conduct direct restaurant oversights, including escalation assessments to ensure food safety standards are met. Manages assessment result data and reports and makes recommendations to senior management on the implementation and maintenance of safe food handling policies, sanitation, regulatory compliance, and standard operating procedures.
• Partners with the Supply chain team to understand and support the supply chain to Olayan restaurants and helps develop strategies to monitor and improve surveillance and traceability of all foods and packaging from source. Support implementation of new/LTO products as well as the food safety and quality of locally sourced fresh products to ensure all food safety and quality standards are met.
• Act as liaison with regulatory authorities and helps manage responses to regulatory inspections, complaints and/or foodborne illness investigations.
• Customize food safety education content to address food safety needs in particular region.
Heading the Quality Assurance Program in 4 different franchises (Karam Beirut, Karam Cafe, Karam Express, Karam Catering) with 20 outlets and 1 catering division across the country.
• Provide support and professional leadership for FSQA and Sanitation teams across multiple facilities.
• Oversight of all Food Safety & QA programs to ensure regulatory compliance and continuous improvement as well as consistent enforcement of procedures throughout the facility
• Lead audit teams during regulatory and/or third party audits of facilities and drive consistent compliance
• Be proactive and ready for all regulatory reviews
• Assist with standardization of sanitary operating procedures by observing and identifying areas in need of improvement and implement programs to ensure production processes are consistent with established standards
• Effectively communicate food safety and ingredient/product quality concerns to management team
• Assist in monitoring the plant environmental conditions and monitor trends for elimination of problematic areas
• Develop, implement, train, all quality programs, HACCP programs, SSOPs, and maintains FDA/FSMA compliance
• Manage and Improve Traceability and Recall Program, including working knowledge of ERP systems to track and trace items throughout the supply chain
• Oversee root cause analysis in investigation of customer complaints
• Lead process improvement/focus team meetings to drive improvement plans related to FSQA issues
• Assist in cross training of Food Safety Plans and all supporting procedures in new and current facility locations
• Oversee implementation and full execution of the Food Safety Plan for multiple facilities, including refrigerated distribution facilities
# Manage Food Safety & Quality Manual (FSQM) through HACCP principles, GMP principles, established pre-requisite
programs, SOPs, and regulatory requirements.
# Perform a risk assessment of each process and develop the critical control points that will be monitored to assure the
production of safe and wholesome food products.
# Develop and execute effective training programs for new and current employees in accordance to the FSQM.
# Host customer and third party audits and ensure identified corrective actions are executed.
# Document customer complaints and respond with appropriate conclusions based on relevant data.
# Responsible for the analysis of new and modified regulations, directives and notices with respect to food processing (i.e.
SASO, GSO, CODEX, USFDA, Local Regulations, etc.).
# Communicate with senior management and staff to continuously improve Company food safety and quality culture.
# Manage and improve Factory on-site QA laboratory through ongoing equipment calibration.
# Collect and analyse data to improve product specifications and create certificates of analysis.
# Perform internal audits, identify root causes and corrective actions, and verify completion of corrective actions.
# Develop HACCP plans for new products
# Develop QA guidelines for products.
# Coordinate New Product Development tasks.
# Conduct raw material and finished product testing to ensure the QA guidelines are met.
# Ensure shipment containers are suitable for product storage before loading.
# Ensure all regulatory requirements of are met to facilitate smooth customs clearance in country of import.
# Act on the customer complaints received and ensure sufficient measures are taken to address the issue at all levels.
# Manage daily production tasks to achieve daily and weekly manufacturing targets.
# Ensure resources needed for production are available.
# Cross functional communication with QA, Supply chain and Engineering on various issues concerning to plant operations.
# Ensure products made are complying to the specifications set by QA department.
# Assist R&D team to conduct product trials.
# Testing of finished products, raw materials and packaging required for Mineral Water packaging.
Quality testing of the outsourced Carbonated soft drinks.
# Testing and planing of Water Treatment Process for beverage preparation.
# Ensuring high standard of hygiene is maintained throughout the operation.
# Oversee the CIP cleaning of the plant.
# Ensure manufacturing lines are optimized on product changeovers to ensure product matches defined specifications.
