I was responsible for planning, implementing and overseeing many programs provided on campus from nutrition to health related topics (AIDS, and sexual health education). I was also responsible for providing nutrition consultations and educations in the campus community.
Interns were responsible of designing and implementing a nutrition plan for each patient based on the patient's assessment of nutritional needs. We also went through different rotations each week, studying different cases from diabetes, obesity, renal, and pregnancy cases and administered a nutrition intervention accordingly.
We got to oversee all the quality control and processing of food from start to end as well as all the safety measurements that are taken to make sure the food catered is safe and meets the quality requirements.
The MPH major in Public Health Nutrition (PHNU) trained me to integrate the knowledge, skills, and experience fundamental to all public health disciplines and to apply this integrated knowledge to alleviate diet-related health problems among diverse population groups. An understanding of human nutrition is important to maximize the health of individuals in a diverse society that faces nutrition-related diseases of both deficiency and excess. A complete understanding of human nutrition is built on knowledge of its fundamental biological and biochemical bases. It also involves an understanding of societal, psychological, cultural and behavioral influences that affect food consumption, and therefore, human well being.
The Bachelor of Nutrition and Dietetics prepared me to work as a professional nutritionists and dietitians in a range of settings. Courses covered included topics in the biological sciences, chemistry and human physiology. Major courses included clinical nutrition, community nutrition and food service management and medical nutrition therapy.
