Core work Activities: responsible f & B Beach Club Outlets to achieve the highest level of customer satisfaction and quality service while meeting / exceeding financial goals
Managing F & B Beach Club Restaurant & Bar/Lounge Operations breakfast, lunch & dinner
reporting to the operations manager & responsible for manage Outlet in charge 10 & team leaders 35 waiting staff, 2 hostesses, 4 cashiers, 6 bartenders with4 bar backs, 6 chefs with kitchen stewarding, housekeeping, security staff and bouncers whilst Ensure the efficient and effective management operation of the outlets.
Monitoring food & beverage control & inventory, bar pars stock, portion control, costs controls, beverage menu pricing, mix of sales analysis for Cocktails, sprites, wine, open beverage, voids & guest returned, captain order issue & returns, breakage & spoilages, food Portions standards and period end opening and closing inventory.
Co-ordinates all promotions, menus, events in the department and assumes responsibility for the Food and Beverage Directors office in his absence.
Prints all beverage & wines menus along with each outlet menu.
Handles all complaint or commendation letters and replies back to the guests after investigation.
Preparation of function sheets for events for special events
Organizing posters for outlets after formatting data and designing outlay.
Maintains and updates reports like the revenue report and the Group financial report.
Consolidates the outlet monthly training programme for the department.
Updates the F & B notice board with all informative detail, which needs to be channeled to all staff.
Handles & follows up on all purchasing requisitions for the department.
Handles all live entertainment like bands for each outlet. Co-ordinates visas, permits, travel arrangements, accommodation, payments during their contract period.
Hotel School certified diploma for food & beverage department Services training from vocational Educational Center ASIA –LANKA INTERNAIONAL HOTEL SCHOOL (affiliated to the kermess hotel school MUNICH GERMANY) 1990-1992 /registered no-528 MS OFFICE computer studies from CAMBRIDGE Educational institute Abu Dhabi .U.A.E
