Total Quality Manager directly reporting to F&B Operations Manager. Handling multiple outlets with dynamic brands in the Emirate of Abu Dhabi. Opening team, lead over all restaurant set up, sales and budget setting, menu engineering, restaurant quality system and other government pre-opening requirements.
Job Description:
Operation
• Ensure the profitability and good state of business of the stores in the area. In-depth analysis of the P&L to manage cost.
• Establish strategies and restaurant system to control food cost and maximize manpower efficiency.
• Conduct food quality, service and food safety audit in all stores in the area and ensure HACCP compliance at all times.
• Maintain visual merchandising of the restaurant based on marketing campaign. Conduct business intelligence and bench marking to determine market dominance and positioning. Local store marketing.
• Monitor logistics of product from production to distribution between Abu Dhabi and Dubai stores.
• Assist in evaluation of site for future network development.
• Facility management.
HR and Admin
• Recruitment and hiring. Conduct orientation and training programs.
• People learning and development based on KRA. Conduct proper coaching on each management team based on their IDP.
• People empowerment through commendation, reward system and team engagement activities.
• Payroll final checking and submission for all stores in the area.
Procurement, Supplier and Inventory Management
• Check and approve LPO on a daily basis.
• Monitor and approve the quality of raw materials delivered in the restaurant.
• Lead the negotiations with vendors / suppliers on cost of raw materials to achieve optimum cost reduction. Maintaining multiple suppliers in every category to avoid run out and substandard usage of raw materials.
• Document control and inventory management.
