Handling the thorough preopening process of F&B units for UAE and
KSA market
• Concept development- Detailed Market research, creating full concept
development direction based on research including interior design &
branding directions, type of cuisine and menu skeleton, ideal location
specifications, manning guide and financials
• Branding - Coordinating with branding designer to ensure all collaterals
are delivered and that the final results are as per client's expectations
• Interior design- Coordinating with dedicated designer on the project to
ensure that initial idea agreed is followed and that the overall design
matches fit out cost projected
• Kitchen design, BOQ and Tender process coordination to ensure that kitchen
is up to Municipality and operational standards and that most competitive
price has been chosen
• Procurement and selection of FF&E and OS&E-post price analysis, the par
levels are accurately ordered, and lead times are as per project timeline
agreed
• Menu development- Organizing menu tastings and coordinating processof
recipe book creation ensuring cost efficiency and item variety as per
concept idea
• Location -Creating location matrix, securing preferred location
and performing lease terms negotiation
• Human Resource- Creating full manning guide and coordinating
recruitment process for managerial positions with HR
• Operational Manuals and Guidelines creation in coordination with heads
of departments ensuring restaurant concept is reflected
• Coordinating launching campaign with marketing and PR company
• Assigning and overseeing implementation of chefs and manager tasks in
preopening stage to ensure successful opening

Assisting day to day operation of multiple outlets
• Monthly Operational reports - reporting pack to client that contains financials, operation, marketing and business strategies for
the forthcoming period
• Cost control- Monitoring the G&A expenses against the budget
• Rent negotiations- Dealing with different real -estate developers to ensure the business incurs an optimal rent
• Supplier price negotiations, volume rebait and payment terms
• Monthly Operational Audits- To ensure that SOPs, procedures and controls, hygiene, product consistency, guest relations
guidelines as well as work flows are being adhered to as per company policy
• Menu engineering- Perform a quarterly cost and revenue analysis on the menu items
• Spot checks- Inventory, recipes and portioning, service spot- checks, product knowledge Set Up of training manuals covering
FOH and BOH rules and regulations
• Operational trainings- Ongoing trainings of both FOH and BOH to ensure deep knowledge and evaluation of team’s know how
• Human resource activities- appraisals, new hiring’s, promotions, team building, incentive plans
• Marketing- Devise and establish traditional and digital marketing strategies ( ITP, Arabian Radio, Local celebrities, Gym
collaborations, Tie ups with other local businesses and celebrity chefs, Expo 2020)
• Events - Ensuring brand presence in following events : Ripe, Beach Canteen, Sole DXB, Global Village
• Business growth- Expansion strategies which involve opening of new restaurant locations and setting up dark kitchen
concepts, creating virtual brands and concepts, creating and marketing new line of products
• Expanding the Tech side of the business- online ordering systems, inventory management, implementation ofPOS,
• restructuring and implementing POS structure
Overseeing the daily operation with over 600 covers daily
• Social Media content creation and Management of all social media accounts
• Creating Marketing strategies to increase Social Media followers and indirectly increase the footfall.
• Preparing staff schedules and providing the necessary documentation to HR.
• Recruiting, Training and Supervising team performance
Full implementation of restaurant concepts for both outlets ( Italian/Mediterranean restaurant and grab & go specialty coffee shop)
• Procurement- Fixed assets and Operating Equipment acquisition.
• FOH and BOH recruitment (Overseas and Inside hire) and DMCC Visa application
• Liaising with the concerned authorities (DMCC and Concordia) to issue the Certificates of Fit -out Completion and all necessary
approvals for the start of the operations.
• Creation of Hand-out book with SOPs, training manuals and procedure charts.
• Conduct staff induction and intense training of service and product knowledge
• Implement the initial pre-opening marketing campaigns.
Supervising & running busy restaurant operation with over 400 covers daily
