I am working as Food Safety and Retail Inspector in Jumeirah Lakes Tower (managed by DMCC) re-enforcing all food safety and public health requirement to more than 500 food retail and retail outlets (Salons, massage center and spa, school, private clinic and hospital) in JLT as per Dubai Municipality and DMCC's standard to identify and control hazards that may lead to food poisoning or risk to safety of consumers by thorough inspection and effective communication with Person In-charge, Owners and Retail's management.
• Directly reporting to the General Manager with regards to overall catering operations;
• Ensures that hygiene standard set by Dubai Municipality are being met to attain Good Catering Services
• Performs visual inspection on the hygiene and sanitation condition of the kitchen premises and other areas involving the handling of raw and cooked items.
• Coordinates with the Steward and Maintenance Department for all non-conformances to hygiene standard set by Dubai Municipality.
• Monitor hygiene practices of food handler and set corrective actions for non-conformances.
• Assists the Executive Chef in coaching the food handlers topics related to Good Hygiene Practices and HACCP awareness through routine inspection and prepared training materials in conducting in-house refresher courses;
• Supports the Management in establishing the foundation of HACCP System in the Kitchen operation.
• Ensures that the daily kitchen production plans are achieved with high level of quality in food and services;
• Coordinates with suppliers and responsible for Procurement of all raw materials needed for the overall Catering operation’s requirement (Kitchen/Office)by preparing Purchase order and invoices using Peach Tree System;
• Liaise with suppliers to ensure that they comply with the company’s requirement and its policy;
• Responsible for the stock management of all food and non-food requirements in Catering Operations;
• Responsible for good stock rotation and on-time receiving of goods and services required in Catering Operations;
• Manage staff attendance and manpower supply as per requirement;
• Performs all other works related to Admin-Secretarial to the General Manager.
• Ensures that hygiene standard set by Dubai Municipality are being met to attain Good Catering Services
• Performs visual inspection on the hygiene and sanitation condition of the kitchen premises and other areas involving the handling of raw and cooked items.
• Performs swabbing and sampling for food, surfaces and water testing.
• Coordinates with the Steward and Maintenance Department for all non-conformances to hygiene standard set by Dubai Municipality.
• Look into potential causes of contamination inside the kitchen and implement preventive measures.
• Monitor hygiene practices of food handler and set corrective actions for non-conformances.
• Administer trainings to food handler covering topics related to Good Hygiene Practices and HACCP awareness.
• Controls all the monitoring sheets involving the HACCP and Hygiene standard.
• Represents the Company for the Food Safety and Hygiene team assembly (Category: Hotels and Catering Companies)
• Perform physical and chemical analysis of raw materials, in-process and finished products evaluating them as to specified frequency of checking
• Look into potential problems and determine possible cause of defects in products and make necessary recommendations
• Ensure that the standard set specifications are being met to attain good quality product
• Monitor and update raw material stocks used in production
• Perform micro-biological processes and wastewater analysis
• Monitor in-process quality check and help in production quality trouble shooting
• Monitor and report to the production office physical condition and sanitation of the plant
• Administer seminars/trainings to co-employees covering significant topics related to different fields of Quality Assurance (Sensory Evaluation, HACCP, ISO-awareness and GMP)
• Practically learned modern micro-testing kits used in different field of application
• Involve in selling modern micro-testing kits used in various applications ( food, agro-industrial & pharmaceutical )
• Provide information and technical assistance to end-users of testing kits
• Conduct trainings/seminars to end-users regarding latest innovations on micro-testing and its importance to food, agro-industrial and pharmaceutical applications
