• Draft quotations, menus, confirmation letters and special projects, follow up with day to day activities.
• Participate in up-selling Food & Beverage products in outlets.
• Maintain high standard of quality control, hygiene, health & Safety.
• Meet and greet guest, organize table reservation and offer advice about menu or events.
• Respond to guest queries and complaints.
• Explain various setups & design available to please customer as per the standards.
• Arrange required staffs for the functions and provide overtime, if necessary.
• Maintaining Daily Food Cost inquiries and complaints.
• Prepare reports at the end of the shift/week including staff control, food control & sales.
• Handles client inquiries i.e. walk-in, online, email & telephone reservation systems.
• Oversee Workflow of the trip.
• Order and follow up food as per number of pax confirmed for Cruise.
• Handel guest issues & concerns by forwarding to sales Manager.
• Coordinate with Sales Team with regards on their booking such as individual, Group, Corporate, and Travel Agents & Hotels.
• Coordinate with the Accounts in regards with cancellation of booking, refund and online payment, bank transfer, petty cash and etc.
• Coordinate with the Cruise Team for Cruise arrangement and setup for the trip.
• On board Cruise Coordination with Captain & Crew during the trip.
• To prepare guest checklist for every event during the cruise and inform to the on board crew for the arrangement.
• Coordinating the entire operation of the restaurant during scheduled shift.
• Managing staff and preparing Shift schedule as per requirement.
• Responding to customer complains.
• Organizing and supervising the shift of kitchen and FOH Employees.
• Reporting on Daily, Weekly and Monthly Sales
• Responsible of doing Stock ordering and daily inventory.
• Maintaining High Standard of quality control, hygiene and health & safety.
• Training and motivating staff for the upgraded promotions.
• Preparing cash drawer petty cash, till cash and making impress.
Ensuring that no shift is overstaffed.
Completing daily and weekly staffing schedules according to expected business volumes.
Coordinating break and meal periods for staff according to activity levels.
