 Implementation of the HACCP system in food operation and supervise Food safety and hygiene activities in the kitchen and
camp.
 Implementation of “ARAMCO SANITARY CODE” throughout the camp facilities.
 Organize Food Safety & Hygiene training (HACCP Level 1 & 2) for food handlers.
 Monitor critical control points such as storage temperature, cooking temperatures, sanitation of fruits and vegetables and
hot holding temperature, if neglected can cause serious food safety issues.
 Development, Implementation, and Monitoring of Corrective action taken throughout the food operation.
 Responsible for implementing preventive systems for avoiding food safety incidents.
 Manage and review food complaints effectively.
 Implementation of SOP and GHP throughout food operation.
 Responsible for maintenance and verification of all documentation in the HACCP system.
 Follow up on the availability of Food Handler’s Medical Certificates for all catering staff.
 Handling client inspection as well as weekly Internal Hygiene inspection and audits and develop and implement a corrective
action plan, in response to findings/observation.
 Managing and maintaining an effective pest control system.
 Managing and maintaining a satisfactory waste disposal system and other environmental activities in Temporary Camp
Facilities.
 Supervise Sewage Treatment Plant and monitoring quality parameters of treated water.
 Supervising R.O plant and maintaining quality parameters of product water to supply safe drinking water for camp residents.
 Supervise periodical cleaning & disinfection of water storage tanks.
 Responsible for water sampling from R.O & STP for testing on a monthly basis by 3rd party laboratory.
 Co-ordinate with camp management for the execution of camp ERP and make liaison with clinic/HSE/management in case of
an emergency like an outbreak of food poisoning and responsible to conduct a proper investigation with the medic team.

Worked as a project trainee on project entitled “Studies on Anti-oxidative activity of herbal extract DIP-106” by using cold-hypoxic & restrain (C-H-R) animal model(Wistar strain of mice) under the expert guidance of Dr. Ratan Kumar Scientist ‘F’ in the department of Pharmacology.

Project detail
Hypoxia, cold and immobilization stressors are known to produce oxidative stress in organisms during exposure to such adverse environmental conditions. Free radicals cause oxidation of lipids, proteins, nucleic acids and damage bio-membranes which consist of lipid and proteins, thereby compromising cell integrity and function. The oxidative damage is either due to increased generation of free radicals and/or due to reduced antioxidants. During the conditions of oxidative stress supplementation of adaptogenic herbal preparations have been shown to reduce oxidative stress due to the bioactive molecules present in plants viz. flavonoides, alkaloids, terpenoids, glycosides etc.
The aim of the proposed study was to investigate the anti-stress activity of a herbal extract DIP-106, earlier shown to possess potent adaptogenic activity in rats during exposure to cold (5˚C) - hypoxia (428 mm Hg) - restraint (C-H-R) stress and most effective adaptogenic dose was 100 mg/Kg body weight, single oral dose / day. After exposing the rats to C-H-R stress, with or without treatment of herbal extract DIP-106, the rats were sacrificed. Blood was collected from orbital plexus of the rats, in the heparinized tubes for biochemical estimation. The aliquots of whole blood were used for the estimation of superoxide dismutase (SOD), catalase (CAT), reduced glutathione (GSH) and LDH. Plasma for MDA was separated from the remaining blood by centrifugation at 3000-4000 r.p.m for 15 min. Blood and Plasma protein was estimated to determine the specific activity of SOD and CAT enzymes.
