Kitopi Cloud/Catering Company, Dubai, UAE
As a Kitchen Manager Responsibility is to make sure all Food we send out
(APROX 950 orders per Day with Increase 15% in Weekend) are high quality, on time,
and within budget.
-To make sure Consistently complying with health and safety regulations.
-Coordinate satellite kitchen teams (over 110 Staff) and oversee a structured daily
routine ensuring Highest standards and Performance are met.
-Optimize operations to make sure Optimizers are at peak performance levels with
astonishingly low prep times.
-Perform quality control checks and monitor production KPI's.
-Evaluate performance of assigned team and initiate promotions.
-Frequently tour through all kitchen facilities to ensure highest possible hygiene and
maintenance standards.
-Control food costs by reviewing and approving all store requisitions and direct
purchases, as well as minimizing waste Below 0.5%.
-Ensure HACCP and ISO standards are consistently implemented and follow
Appropriate hygiene standards as per official requirements.
-Maintain and raise profit margins on food whenever possible.
Achievement:
-85% of Orders Move out of Kitchen within target time (12 Minutes)
-Pass The Internal QHSE Assessment above 90% in Last 10 Months
-Drop the food Waste below Company Target which is 1% (Reach 0.5%)
-Promote Four of Team from DCDP to CDP in Last 6 Months
-Cooperate with Cost controller to Make Sure orders done within Budget
