-Working hand to hand with the Executive chef.
-Ensuring the standard quality of food being served to the guest.
-Planning and procuring materials and equipment for kitchen.
-Indenting and ordering for the kitchen with approval of Exe chef.
-Leading a kitchen team of 30 cooks and 5 CDP.
-Ensure that kitchen is well organized for every service.
-Responsible for the Restaurant food cost report, operational cost report, month end inventories and there by stock flow control
-Generate reports like sales mix, consumption, high priced raw material tracking etc
-Developing tools like line build, line check, cleaning log, material control to ensure quality in service.
-Train the kitchen team on company standards with regards to quality.
-Planning general modules for Training and Development of kitchen staffs.
-Responsible for kitchen hygiene and sanitation.
