• Worked on ISO 22000 certification for the Central Production Unit including layout of the premises, preparation of all needed checklists and documentations (including SOP’s) and daily spot checks, reports and follow ups.
• Gave internal basic food hygiene training for staff.
• Prepared a food safety audit system based on different checklists for CPU, restaurants (Mezza House and Zaroob) and the warehouses.
• Conducted monthly audits and weekly spot checks including maintenance issues, cleaning, food safety/personnel hygiene, customer service and food tasting.
• Prepared reports based on the audits and spot checks, gave specific recommendation and communicated with the respective person in charge in order to achieve results in a specific time range.

Main Responsibilities:
Site inspection:
Check food handling processes including:
Checking for any risks of cross contamination during preparation of food items
Making sure that food items are not kept in temperature danger zone and raw food is cooked to reach the acceptable minimal temperature
Ensuring that proper vegetable sanitizing is taking place
Checking if food items are labeled with the acceptable shelf life
Checking expiry dates of food products
Check chilled storage areas including:
Checking the cleanliness of cooling units
Checking if cooling units are showing correct temperatures
Ensuring proper storage of food items
Check cleaning procedures including:
Checking kitchen cleanliness in addition to staff restrooms
Checking the concentration of food grade sanitizers
Ensuring proper use of detergents to avoid misuse
Making sure that chemicals and cleaning equipments are separately stored away from food and preparation areas
Check the personal hygiene of staff including:
Checking if staff is of proper attire
Ensuring that no eating, drinking or smoking takes place
Checking if staff wash hands correctly
Quizzing staff regarding basic food safety principles
Inspect dry stores and warehouses including:
Checking the cleanliness of storage areas and proper food storage
Making sure FIFO/FEFO is implemented
Checking for damaged goods and making sure they are labeled properly
Ensure that all monitoring logs are available and filled
Note all maintenance issues that might affect the safety of food preparation processes and storages.

Main Responsibilities:
Oversee food process operations including:
Checking manufacturing dates of food products
Control over incoming and outgoing food product deliveries
Monitor the works of the cleaning staff
Oversee subcontracts covering detergent supplies, and pest
management
Regular checkup on the facility to spot any potential threat
that could result in a sanitary or pest problem
Continuous coaching of employees to adhere to codes and
regulations pertaining to personal hygiene and food safety
Log all discrepancies by initiating an incident report
detailing the arising problem, claim of staff, and forward to
the manager for a plan of action
Weekly audits for all showrooms and the factory to verify
that all systems adhere to all standards and regulations
whether HACCP or internally developed guidelines
Report all breakdowns and malfunctions affecting food
production process quality to the manager for proper action
