• Thawing/Staging time monitored responsible of frozen fish and fresh including
time and temperature, monitor pre-cooking process including time and
temperature of fish prior and after pre-cooking, and proper staging time of
uncooked & pre-cooked loins
• Packing responsible of percent % flakes, net weight, condiments and allergen
• Chemical Analyst responsible on histamine, salt & moisture content analysis
which deals with the scientific preparation, processing and distribution of foods. It is also concerned with the improvement of food products’ flavor, appearance, storage qualities as well as in the control of quality changes during processing, marketing and distribution.
