Dante LLC was a concept introduced in 2007 with a vision of introducing healthy fast food in Dubai. As Operations Manager, I was responsible for the entire operational set-up including:
- Sourcing sales locations;
- P&L responsibility for the operational management of the company;
- HR, training & recruitment;
- Introduction of policies and procedure manuals;
- Customer care and quality control;
- Introduction and implementation of HACCP controls;
- Reviewing buying trends and sales strategies
- Restructuring of the administration and finance systems to ensure accurate, real-time reports on property sales and consultant performance;
- Managed property inventories;
- Liaised with master developers on project milestones;
- Managed a team of 5 salespeople (targets, customer deposits, commissions);
- Diary management, administrative tasks and travel management.
Alongside assuming overall responsibility for a 500-capacity bar and 100-cover restaurant, I was responsible for overseeing operations in the hotel’s five food & beverage outlets. This included:
- Developing inter-departmental trainers to develop and execute outlet SOPs;
- P&L for promotions and events and securing sponsorship;
- Developing a system for menu engineering to ensure higher F&B profit;
- Introducing sales-based rewards schemes for team members.
I was also a member of the Towers Rotana Staff Welfare Committee and regularly organized sports and social events for the hotel team.
Reporting directly to the proprietors, I had overall responsibility for this luxury boutique hotel; fine-dining restaurant and conference and banqueting facility including:
- P&L responsibility for the operational management of the hotel and outlets;
- PR, Sales and Marketing for the hotel and restaurant through developing affiliations such as Best Loved Hotels, Conde Nast Johansens and Welsh Rarebits;
- Research and benchmarking of similar properties in UK heritage sites to ensure that The Green Bough retained its status among the highest rated hotels in its class;
- Ensuring only the highest standards in personalised customer service through continuously reviewing feedback from guests and industry professionals.
I joined the team amid an extensive refurbishment project and launch of a fine dining restaurant; gastro-pub; conference and function suite and executive bedrooms, assuming responsibility for all F&B outlets and the role of Hotel Duty Manager. Prelaunch offered the opportunity to introduce new training and customer service standards for the Front of House teams. Operational responsibilities included:
- Establishing relationships with existing suppliers to maximise profit and achieve budgeted revenues;
- Managing P&L for the F&B outlets;
- PR, Sales and Marketing for bars, restaurants and function suite;
- Managing the training and development of a team of 40 staff across five departments;
- Developing and maintaining relationships with clientele to establish guest satisfaction and repeat custom.
