Core responsibilities:
• Liaising with supportive & business functions (Product Development, Technical Packaging, Projects, Value Buying, Food Service, and Marketing) for developmental projects in order to achieve company vision.
• Producing the following categories of products:
o Bread & Croissant
o Convenience (Pizza & filled products, Cake)
o Puff Pastry, Spring Rolls, Sambusak, Baklawa & Konafa.
o Vegetables & Cheese
• Managing overall work-force of 450 employees & 9 direct reportees
• Managing the following departments:
o Production & Process Control
Daily Production Adherence
Productivity (Kg/Man-hour)
Statistical Process Control (SPC)
o Integrated Planning
Master Production Schedule (MPS)
Rough Cut Capacity Planning (RCCP)
Material Requirement Planning (MRP)
Daily Production Plan
Inventory Control & Out Of Stock (OOS)
o Maintenance
Process Reliability & MTTR/MTBF
Preventive maintenance (Overhaul, Service)
Breakdown Repair & Root Cause Analysis
o QC/QA
Chemical/Physical/Microbiological Analysis
ISO 22 000
Hygiene (Equipment, Site, Personal)
o Raw & Packing Materials (RPM) & Spare Part Warehouses
Spare Parts Management.
Warehouse Management (FIFO, Offloading-RPM & Loading-FG)
Raw & Packing Materials issuance.
Conduct regular & annual physical count to maintain desired accuracy level.

Manpower Plan & Employees Disciplines

Scrape Factor determination.

o Financial costing
Prepare annual budget of manufacturing expenses versus sales volume growth to identify all manufacturing expenses including additional manpower requirement and capital expenditures.
Maintain desired cost per ton.
Carry out saving initiatives.
• Leading (S & OP) Sales & Operation Planning monthly meeting for all categories (Pastry, Bread, Croissant, Meat & Honey, Vegetable, Cheese) with senior leadership.
• Leading sales forecasting monthly meeting for Domestic & Export markets to:
o Make initial supply-ability assessment of 18 month rolling forecast (unconstrained demand)changes according to i) Frozen, ii) Slushy & iii) Liquid zones.
o Make sure annual targeted budget are going to be met financially & volume wise from manufacturing/buying (Supply Party) in terms of capacities, raw and packing materials and Sales/Marketing (Demand Party) in terms of natural growth & marketing activities.
• Leading initiatives (new products) & promotion weekly/monthly meeting for all categories & maintaining Master Initiative Plan for all projects & Base Initiative Plan for each Project to:
o Align all parties (Marketing, Sales, Finance, Operation, Logistics, and Buying) on new projects through Project Establishment-Kick-Off Meeting.
o Make Feasibility & Cost Reply (FCR): which will lead to buy or make (manufacture) decision.
o Ensure launching/delivering projects on timely fashion by adhering to agreed critical path schedule (CPS) among the stakeholders.
o Ensure delivering with the right Cost & Quality.
• Measuring forecasting accuracy based on MAPE & Arithmetic basis on a weekly basis.
• Mentoring Inventory Level (Inventory Control- DOH)
• Measuring supply responsiveness (Product Availability) versus the demand.
• Measuring out of stock across all branches.
• Measuring C/D ratio (Capacity vs. Demand) to maintain healthy supply flexibility
• Setting annual master production plan based on sales forecast.
• Preparing the annual budget for production department.
• Releasing daily production schedule on monthly basis by evaluating capacity constrains for Making (BATCH Process) & Filling (CONTINUOUS Process) sections and meanwhile checking raw & packing materials availability in order to achieve the delivery targets on time.
• Evaluating the efficiency of the production team (Skill Matrix) & Enhancing job enrichment training programs to develop personnel skills (Induction Sessions).
• Ensuring daily production adherence & achieving the targeted productivity.
• Achieving or exceeding the desired process reliability & controlling scrape rates.
• Applying Safety & Hygiene & Quality Programs.
Supervised production activities and ensured the competence of all Staff to fulfill schedule deadlines.
Prepared daily production plan with respect to capacity and raw materials availability.
Increased productivity by preparing sub assemblies and eliminating unnecessary steps.
Implemented a job enrichment training programs to the production staff.
Minimized scrap and surplus disposal by reviewing the processes.
Planning of Materials & Inventory Control (Re-Order Level, Physical Count) and creating documentation for this operation.
Minimizing the operation cost by substituting international suppliers with local ones.
Building strong relationship, negotiating and initiating contracts with all suppliers by evaluating all aspects (Quality, price, lead time etc)
Participating in designing the supply chain process, internally and externally
Controlling the standards specification of Raw Material to fit the quality of Sealy products.
Supporting the company ERP System by creating a pivot table that automatically generates the bill of Material.
Submitting weekly, monthly and annually reports such as Budget, updated supplier Database, actual & theoretical consumption of RM, and make-buy studies.
Meeting periodically with marketing/sales management to evaluate Sales Forecast Analysis (retail & project).
Using mixed techniques between MRP and JIT to minimize the stock level of low materials.
Supporting the Finance Department by providing landed costs & Forecasting material prices.
Being in charge for instalation of cooling towers for cement factory
