The Main Responsibilities

•To manage the daily operation and monitor the (food & dining) preparation for more than 1200 customers in both mess hall (Seniors-Junior-Labor, Multi Nationalities Arabic African- western) and carry out regular inspections (Catering, Cleaning, Pests, Vehicles) of each allocated location, and make sure to maintain a clean and healthy working environment at all the time.

•Monitor food quality and consistency to ensure food presented is of highest quality and standard as per the agreed menus & (HACCP) standards.

•Regularly assesses and reviews process and procedures to identify areas of improvement and establish acceptance of new methods and standards.

•Participate in contracts and Negotiation with customers, assess their requirements and ensure they are satisfied with the service delivered (in contract catering-SOW).

•Plan, Prepare and devise work schedules, accordingly to manning workloads.

•Maintain constant liaison with the Client representative for his operation, Safety matters and establish a good working relationship.

•Planning the menus & special functions in consultation with Ex-chefs then supervise the set up and provision services.

•Carry out annual evaluations of staff. Make recommendations for employee promotions, salary changes, employee of the month, disciplinary action, including termination where applicable.

•Follow up with accommodation camp boss cleaning schedule such as rooms, Furniture’s laundry, toilet, surrounding on daily basis and (Anybody sick or absent) reported and keep record.

•Follow up with camp boss the daily maintenance report and ensure the work is done be the concern person as well recorded along with pest control schedule has implemented for all outlets.
•Ensure with camp boss the rules and regulations in the camp maintained in accordance with company’s policies and procedures and ensure strict and consistent compliance by all camp occupants along with maintain standards of safety at Camps and comply with Health, Safety policy

5. Monitor the processing of ordering, receiving, storing commissary items and distributed to all units according to their needs & requests and maintaining enough stock all time.
6. To liaise with client representatives, meet with them on a regular basis, develop sound working relationship, in order to be aware of customer demands and requests on a timely basis, and react to such demands immediately and in an effective fashion.
7. Participate in costing and menu preparation for contract bids and to continuously search for ways to improve service to clients, adding value to the product without increasing costs
