- Establish standard costing and analyze F&B cost’s movements.
- Create/update recipes (Food, beverage and special costing).
- Preparing monthly menu engineering reports.
- F&B monthly consumption and slow moving report.
- Conducting Yield testing for all ingredients & recipes.
- Check menu costing and verify it with pricing policy (Quarterly basis).
- Prepare daily, monthly, and yearly F&B cost flash report.
- Prepare monthly F&B cost & Prime cost report and month-end reconciliation report.
- Preparing P&L statement to measure the profitability of a function.
- Daily contact and exchange of information with executive chef, head butcher and head pastry.
- Monitoring the movements of assets and conducting asset inventory yearly basis.
- F&B operating equipments inventory.
- Monitor stocks of F&B and general stores.
- Reduce spoilage by monitoring and using better stock movement.
- Ensure proper issuance for F&B and general items from the stores.
- Conduct market survey and competitors check.
- Managing the good relationship with suppliers.
- Evaluate suppliers and Negotiate contracts.
- Review product quality and cost.
- Preparing purchase LPO.
- Assures to purchase items on a cost wise with a good quality.
- Reconcile purchases of all stores rooms and outlets. Conduct spot checks as per the hotel policy.
- Monitoring returns, damage replacements, and warranty claims.
- Checking & approving bills of payment.
- Preparing weekly & monthly purchase report for senior management.

Train staff in policies and procedures and supervise their daily work.
- Ensures that the team is working and functioning as one team to reach one goal.
- Analyze and maintain operational data.

- To ensures that everything flow of the restaurants are all fine and items complete
- Receives reports if there are any issues concerning the operation and will report to
the top management.
- Maintain a good relationship between the management and clients.
- Ensures that the items are properly labeled (expiry label).
