Major responsibilities are to fulfill the requirements of fast scale operation, adapt to continuous changes because of versatile nature of the product, meet customer and market needs locally and abroad, continuous improvement in terms of quality and safety of the system product, managing personnel
of different backgrounds, undergo trials for new ingredients and technologies, close coordination with different departments, informing top management of all department operation and progress through precise reporting. The performed activities and tasks include, but not limited to:
o Planning and scheduling all activities in processed cheese department
o Daily monitoring of processed cheese manufacturing: Mix preparation, cooking, filling and
closing, labeling & cartoning, refrigerating, warehousing, and truck loading
o Writing reports for upper management regarding achieved progress and other issues
o Machinery performance follow-up and close coordination with maintenance department
o Ensure that hygiene and food safety requirements are fully respected
o Ensure that statutory and regulatory standards are met.
o External communication with suppliers, regulatory authorities and other.
Main function is to ensure that production of goods in dairy industry is meeting expectations in terms of efficiency, timely production, budgetary controls, and standard requirements.
Main duties and responsibilities encompass roles in planning and management, operation and floor coordination, and system quality. The performed duties include, but not limited to:
o Monitoring the production from raw material order till dispatching of end-product.
o Establishing criteria and their acceptable limits according to the process requirements.
o Assisting the production manager in planning and developing a production schedules on a weekly basis: drawing up master schedule to establish sequence and lead time for each operation and activity to meet dispatch dates according to customer orders,
o Specify needed resources for every activity (raw material, workforce, packaging material, etc) and make sure to coordinate and spread the information formally to involved departments
o Set and monitor required KPIs (Key Performance Indicators): Minimize generated waste; Optimize activity lead time; Cost improvement; etc,
o Proposing process changes,
o Leading trials for NPD (New Product Development)
o Coordination and following-up on-site the implementation of different activities as per planned schedule.
o Leading work force in coordination with supervisors,
o Monitoring and coordination between production lines and departments,
o Producing reports, SOPs, product specification, written instruction, checklists, internal communication forms,
o Conduct external communication with suppliers and service providers,
o Performing internal audits; initiating CAR (corrective Action Request); etc,

Development, implementation, maintenance and update of food safety management systems within food processing establishments and at farm level. The ultimate objective is to bring the client to norms of the international standard and accompany him till the achievement of external audit and acquirement of the intended certification. The performed main tasks include, but not limited to:
o Creation of all documentation needed for system operation and required by the standard, including procedures, registration system and informative material.
o On site visits as much as needed for data collection, system communication and implementation
o Guide the client in case of infrastructure work and premises layout needs to be conform to basic hygiene rules and prevent cross-contamination
o Assure staff training and knowledge availability from basic hygiene rules till advanced level information
o Enhance internal communication and specify responsibilities to minimize as much as possible food contamination risks
o Enhance external communication with organizations existing downstream, upstream and inter-related within the food chain
Design and implementation of quality system within the farm for its three main fields of work:
1. Production, outsourcing and packaging of fresh fruits and vegetables, including all handling and post harvest requirements
2. Food processing such as jam and juices, and their preservation within the frame of the organic regulation.
3. Production and packaging of organic eggs.
Implementation, maintenance and follow up on the organic production system of the farm assuring all requirements of the regulation and continual communication with the certification body.
Development and implementation of a regional quality system for the management of olive orchards, olive oil and dairy goat farms in south Lebanon (Hasbaya-Marjayoun-Bent Jbeil casas). A GLOBALG.A.P-based approach was adopted at farm level. A traceability system was established covering the entire food chain from farms till packaging units. The project targeted 200 farmers in the first year, and a total of 380 farmers at the end of the project.
The aim of this project is to reach with farmers, and through existing cooperatives, products of high quality standards by establishing a centralized production system to reach the appropriate markets
Responsible on quality assurance and quality control activities in the company regarding raw material, intermediate product and end product, driving researches and development of new products, establishment and implementation of ISO 22000 Food Safety Management System, coordination between the different departments as FSMS team leader
As an agricultural engineer in production department responsible in organizing and coordinating activities of 50 workers, involved in Quality System (QC/QA, Standard Operating Procedures (SOPs) preparation), the processes of Deep- Fat Frying (potato and tortilla chips), Snack Extrusion (puffed snacks) and Baking (tortilla chips), as well as ensuring quality and safety of end product.
