In my thesis, I focused on analyzing and improving the safety and shelf life of croissants produced in an industrial setting.
• I applied the HACCP methodology to systematically identify potential hazards biological, chemical, and physical and determine critical control points throughout the production process.
• To enhance shelf life, I proposed and implemented improvements in packaging materials, gas composition, and storage conditions, including the use of aluminum and polyethylene layers, reduced oxygen levels, and controlled nitrogen and carbon dioxide levels.
• I applied a compensated vacuum technique to remove air before gas injection, reducing oxidation and inhibiting microbial growth.
• Additionally, I focused on personal hygiene and proper handling procedures to control the risk of E. coli and other pathogens.
