• Develop and monitor the HACCP program(Hazard Analyzys Critical Control Point)
• Daily inspection of catering department for physical and operational standards is met.
• Maintaining proper hygiene standard
• Daily checking all chillers, freezers, bain marie, hot cabinet, ventilation of the kitchen in proper temperature.
• Maintaining the kitchen and mess hall clean & tidy.
• Daily checking food temperature to ensure the safety of our clients.
• Coordinate to all clients and Camp Boss once there are uninspected complain and various concerns regarding the food.
• Monitoring the delivery food products vegetables, fish, meat, dry store items in proper temperature, expired date, production date and specially the temperature of the delivery car before receiving the items.
• Coordinating to the Abu Dhabi Food Control Authority (ADFCA) when they have surprise visit to the catering department.
• Correspondence such us making memos and warning letter if the catering did not abide Abu Dhabi Food Control Authority (ADFCA) rules and regulations.
• Requesting all the needs of Abu Dhabi Food Control Authority (ADFCA) to catering department to avoid violation.
• Initiate problem solving with kitchen supervisors and managers in response to quality-related production problems. Report problems and action taken to the appropriate managers.
• Monitor sanitation of all food production ares and equipments.
• It is the responsibility of food safety officer to ensure safe work methods are established at all times.
