Responsible for all aspects of production for the AutoBake line running Mini
muffins 24/6. Product ramp up included working with R&D to solidify
formula, training of new 2nd and 3rd Shift employees. Meeting demands of
filling customer pipelines and sustaining rigid quality standards utilizing a
diverse multicultural workforce.

Responsible for 18+ employees, managing bun production line; prescale
through packaging.

Travel all over the US delivering loads in a safe and timely manner. Driver
of Sprinter Vans and Box Trucks.

Travel all over the US and Canada to different bakeries to install,
commission and train employees on equipment and/or processes. Work
with different plants to improve processes, develop new products and/or
achieve better, more stable results from current processes. Trained in
Germany for 6 weeks.

Responsible for 230 employees, 10 Salaried Managers, 3 production lines
with fresh bread deliveries 6 days a week throughout most of the state of
Florida. 240 SKUs from handmade products to regular white loaf bread.
Developed training classes, standards, SOPs for diverse (3 languages)
workforce. Implemented management structure/chain-of-command.
Developed employee incentive programs to improve morale and reduce
turnover including weekly employee newsletter. Streamlined production
process, improved product quality, reduced waste and staffing. Reduced
labor cost dramatically.

Responsible for 300+ employees, 12hr shifts, 4 days/wk, 7 salaried
Managers, 13 hourly leads, 2 production lines with 3 packaging lines.
Developed training classes, standards, SOPs for diverse (3 languages)
workforce. Implemented management structure/chain-of-command.
Developed employee incentive programs to improve morale and reduce
turnover. Discovered, by tracking data, several areas of waste and over
usage of ingredients that will potentially add over $100, 000 dollars to the
bottom line. In process of converting all production paperwork to I-pads to
eliminate costly paper/storage costs. Developing First Case check sheets
for all products to reduce/eliminate employee mistakes.

Responsible for initial plant start-up, including a bread line and a hearth
line. Manage the operation of the entire plant during the night shift,
Production and Shipping. Responsible for managing: 3 Leads and 27
employees. Increased yield by 28% in a 24 month period. Reduced scrap
by 11%. Initiated the following training programs: including Safety; Food
Safety; Good Manufacturing Practices; and the AIB correspondence course
for the Production Leads, Packaging Foreman, and Shipping lead.
Improved management/labor relations and reduced employee turnover.
Consistently maintained AIB Audit scores that were 925 or higher- Superior
rating. Initially completed SQF Certification in a 4-month time frame with
an A rating, subsequent audits resulted in the same score.
Responsible for the operation of a chemical plant dealing mainly with
defoamers, cleaning compounds, toll and pine oils and precipitated silica.
Led plant to reach positive profit margin 6 out of the last 7 months.
Developed and implemented daily shift work cards. Reduced turnover and
stabilized work force. Reduced time between shipment and billing from
over 6 weeks to 3 days. Maintained all inventories, performed the majority
of purchasing. Direct contact with Vendors, Suppliers, and Customers.

Responsible for the operation of a 1.5 million pound a week prototype white
bread production line. Developed team staffing plans for all 75 employees.
Led team to win multiple monthly production contests. Developed and
implemented daily shift sanitation standards. Worked with team members to
develop Standard Operating procedures for equipment.

Responsible for the management and operation of a medium speed, 450, 000
pound a week bun and roll specialty freezer line from makeup through
packaging. Perform scheduling duties for 3 supervisors, 2 lead people and
63+ employees. Increased efficiency by 10% while reducing workforce by 2
positions (6 total annual salaries). First winner of the Flowers Gold Pinnacle
Award. Perform scheduling duties for 40+ employees. Certified and
knowledgeable in SAP inventory management system. Trained employees in
multiple sister plants on SAP and job duties. Advanced level understanding
of dough and dough formulation. Experienced in all phases of production
paperwork. Led shift to win multiple first place finishes in production
contests.
