● Reporting to the Site QA Manager, managing a 10-member team, with direct reports of 3 QA Supervisors & 2 Hygiene Supervisors. Daily interaction with plant and corporate management on projects affecting quality, food safety and efficiencies.
● Facilitate in implementation and ensuring compliance of Food Safety Management Systems (ISO 22000, BRC Version 8, HACCP), GSO/ UAE regulations for ready to cook/ready to eat frozen poultry and beef value added products
● Facilitate in scheduling, conducting Supplier, FSMS certification (BRC Version 8, FSSC 22000:2015) and Customer Food Safety and quality audits (Yum Brands, Burger King, Subway, US Army) and Halal audits.
● Develop quality testing procedures (AQL sampling), ensuring site compliance with product specifications, labelling procedures, and develop team.
● Managing and overseeing maintenance of food quality and safety programs including: Good Manufacturing Processes (GMPs), Sanitation Standard Operating Procedures (SSOPs), Environmental Monitoring, Hazard Analysis and Critical Control Points (HACCP), Allergen
● Generate monthly management reports & trend analysis reports for site and group level management covering KPI’s Customer complaint (CPM/kg sold), Audits, Raw Material / Finished Good Performance.
● Provided audit and training support to 30+ corporate cafés and retail franchise outlets within Middle Eastern regions by enforcing quality compliance to establish internal standards at all locations.
● Maintained internal corporate quality and food safety system by conducting audits, monitoring output, evaluating processes, identifying risks, and implementing mitigation strategies.
● Measured and evaluated new food and packaging suppliers in accordance with corporate supplier global standards ensuring compliance with established regulations and annual plan.
● Collaborated with third party contractors to manage laboratory services, including pest control, preventative maintenance, and government services ensuring compliance with food safety standards within store locations.
● Partnered with 200+ food retail stores countrywide to implement food safety, hygiene, and quality systems ensuring compliance with Alshaya/Regulatory/Customer Quality & Food Safety Standards by monitoring quality and process control procedures.
● Reporting issues and working with respective Area Managers/ Store managers in resolving food quality, hygiene, and safety related issues in assigned locations through internal audits, periodic trend analysis on root causes of reported findings, and creating corrective and preventive action plans.
● Conducted and reported pre-opening and post-opening audits for new store launches by performing random onsite inspections and quality audits.
● Provided guidance and direction to key clients, including Starbucks, Cheesecake Factory, P.F. Changs, Shake Shack, Texas Roadhouse, IHOP, Pizza Express, Asha’s, Katsuya, Al Forno, Teavana, and Pot Belly.
● Liaison with third party contractors and cross-functional departments to manage food laboratory services, including pest control and facilities services maintaining strict adherence to food safety standards within locations.
● Reporting to Quality Assurance supervisor, manage daily activities of junior quality control and hygiene officers, responsible for ensuring product food safety & quality compliance to client and regulation requirements via internal inspection/ audit routines.
● Supported direct manager in creating, implementing and enforcing GMP, hygiene & sanitation monitoring, verification programs
● Coordinated external laboratory testing, including managing process of package shipments and client samples, receiving results, and analyzing information.
● Established and monitored quality technician schedules and carry out performance appraisals to coach and develop internal talent.
