Duties:
- Developing & implementing of SOP’s;
- Overseeing orders - placing, purchasing & receiving
- Food safety implementation - checklists & compliance with local food safety code
- Inventory tracking & cost controlling
- Food Cost analysis:
- Develop menu and implement costing;
- Budgeting - P & L and budgets analysis for each outlet, in order to have a clear view of the financial aspect of the business;
- Suppliers - source local, approved suppliers for all the items used in daily operations in order to lower the operating costs and keep records of expenses;
- Hygiene - implement a hygiene program for all the staff including, but not limited to daily checklists, spot-checks, training & sourcing approved chemical supplier & cleaning materials supplier in order to lower the operating costs & comply with local regulations;
- Menu offering: Develop & implement the new items by sourcing local suppliers, at better rates, and increasing the profitability
- Develop standardized training manuals for all staff members

- Preparing Month End Analysis for each location performance, submited to Managing Director
- Preparing Month End Analysis of overall business, submited to Dubai Airport Commercial
- Obatining all necesary documentation for works & personell permits
- Maintaing and develop work relationship with all Dubai Airport departments

- Expand the revenue channels
- Responsible for managing restaurant pre-opening phase, organizing contractors, obtaining government licenses
- Managing the project to ensure the expected, look & feel, functionality and design are implemented according to local laws and design package
- Sourcing and purchasing all kitchen and restaurant equipment including food and beverages, furniture and utensils, and ensuring a safe environment for staff and guests in full compliance with regulations
- Responsible for implementing most efficient practices in order to maximise service levels while minimising costs of supplies, utilities and labour
- Overseeing day to day operations including controlling inventory, managing levels of food and supplies, and ensuring guests receive the best possible dining experience
- Ensuring all sanitation policies and procedures followed for food preparation, maintaining kitchen and dining areas, and complying with operational standards relating to the company and relevant laws
- Managing daily shifts including creating staff schedules, completing staff or guest accident reports as required, dealing with problems as and when necessary and resolving complaints with optimal efficiency
- Participating in key strategic objective setting in relation to sales and marketing, coordinating restaurant opening, setup and closing procedures, and ensuring complete guest satisfaction
- Maintaining overall restaurant reputation and standing, working in alignment with organizational ethics and social responsibility and ensuring all personnel adhere to appropriate standards

- Creating and maintaining positive relationships with new and existing customers, and ensuring good collaboration and communication between staff at back and front of house
- Supervising and overseeing development of new staff, delivering training, organising shift rotas, and promoting a culture of communication and high motivation
- Maintaining designated area of responsibility, visiting clients, and delivering first class support and training to staff from “Filicori Coffee” locations
- Identifying new client opportunities, building relationships, performing demonstrations showing quality of product and service, and providing support to assist with client business development and growth
- Managing a team of 11 personnel, coordinating recruitment and selection, delivering effective training and support, and monitoring performance in order to improve wherever possible
- Identifying promotions, monitoring performance following comprehensive training and development, reporting on individual promotions, and tracking performance of companies contracted to organisation
- Delivering outstanding customer service to customers, dealing with queries or complaints quickly and effectively, and clearing tables and counters to ensure excellent presentation
- Mixing and serving alcoholic and non-alcoholic beverages, ensuring an attractive and well stocked variety of drinks, and ordering supplies as necessary
