Fulfilling the requirements of local authority Dubai Health Department - Food Control Section as per its specified guidelines for food establishments in Dubai & Federal Law
Implementation of HACCP (codex Alimentarius)/Dubai food code concepts in receiving, storage, transport, Processing, cooking and serving as per food flow
Constructing the HACCP team, regular meetings with team and minutes preparation
Establishment of monitoring system, corrective actions, Verification procedure, record keeping and documentation according to hotel’s HACCP manual.
HACCP team leader, issuing food safety memos and amendment preparation for the manual to improve the FSMS
Reporting to General Manager
Liaising with other departments regards to pest control/preventive maintenance/GHP/health and safety policies / sustainable activities
Daily checking and monitoring of all the F&B areas and equipment along with responsible person
Verification/Validation of all HACCP documents/ ISO 22000 Coordinating with Engineering and Stewarding on HACCP related issues. Coordinating with Engineering on Planned Preventive Maintenance. Developing and partnering with engineering for Waste Management System. Leader for Sustainable monthly activities conducting in the Hotel
