• Design cost controlling system and procedures to effectively control Food & Beverage costs.
• Design control measures to reduce wastage, pilferage, and improve output.
• Responsible for each item recipe with quantity with the head chefs involvement, set each items cost, and continuously evaluate for improvement.
• Verify the cost and quantity of each recipe and ensure that the costs are within standard costing.
• Review the pricing at different outlets and ensure the correct prices are loaded on POS.
• Review the product cost with recruitment department and review the supplier pricing.
• Continuously study weaknesses in F&B control at the outlets and provide suggestions for improvements to the management.
• Conduct variance analysis, prepare analytical reports, & communicate with the head of the department to control variance.
• Ensure that no material is issued from the store without requisition or approval by the authorized person.
• Prepare monthly warehouse cost variances analysis for food and beverage.
