Clinical Nutrition: Assessed nutritional status designed and provided medical nutrition therapy for patients in General Medicine, Surgery, Oncology, Nephrology, Cardiology and Intensive Care. Provided Staff Relief as a Dietitian on Intensive Care Consulted with physicians and other healthcare professionals to determine nutritional needs and diet restrictions of patient or client. Consulted obese outpatients and followed up on the changes in their diets, laboratory results and health status. Foodservice Nutrition: Conducted HACCP plan for different food items prepared in the kitchen facility, roasted chicken, custard, and milk based puddings Conducted a business plan comparing on-site prepared enteral feedings to ready-made enteral feedings Conducted and delivered an in-service training on the appropriate food temperature measurement for the kitchen employees Inspect meals served for conformance to prescribed diets and standards of palatability and appearance and monitor food service operations to ensure conformance to nutritional, safety, sanitation and quality standards. Underwent many rotations including: Diet aide, food production, food purchasing, receiving and storage. Applied the food safety rules and regulations while performing the different rotations. Performed recipe standardization, menu planning and several meals and salads nutrient analyses. Community nutrition: Developed and presented educational material (postures, games, and advice cards, anthropometric measurements) for students in NutriShape event at the Lebanese American University.Performed community work services to the public as in conducting awareness sessions, assessing their needs and implementing nutrition-related interventions accordingly. Developed diabetes awareness, osteoporosis awareness event, nutrition health awareness day at Rizk hospital and diet pills awareness events for the public.
Assisted the inspectors during their inspection visits to food-related companies. Applied HACCP & food safety guidelines and measures during the inspection visits. Assisted in giving warnings to all the institutions not abiding by the food safety measures & followed-up during other visits to check for the required changes in food-related behavior & the company’s construction affecting food production.
Maintaining Data of Alumni Donors and files using the Raiser’s Edge data base system, and analysis of reports and queries. Receives telephone calls, emails, faxes and other correspondence, provides information and receives complaints. Takes care of logistics required such as booking of transportation, rooms and food orders. Assists the Executive Assistant in supervising the work of student assistants assigned to the office and monitors their contracts and timesheets, to ensure they fulfill their duties. Filing, report and research daily activities Participated in the Phonathon Fundraising Program and contacted previous LAU alumni. Participated in the Plant Your Class Tree Fundraising Campaign and contacted the graduating students. Assists in the preparation for the LAU Gala dinners
