Controlling cost aspect of hotel and all outlets across UAE and International (Singapore, London)
Work hand in hand with chef to keep food cost under control
Ensure all items purchases or supplied into all departments are gotten at best price and quality
Prepare monthly potential food and beverage cost of sales
Producing menu engineering report to identify low profit and low moving items, advise managers make necessary steps to improve it
Cost all food and beverage items and where practical, input these costs into point of sales system
Weekly spot checks and Monthly Inventories in outlets and investigating variance
Monitoring utility and staff food consumption and inform concern departments on variances
Reconciling complimentary and discount checks and report any unauthorized transactions
Supervising and guiding all receivers in different outlets for day to day operations and verifying invoice posted against LPO are as per company specifications.
Importing Daily Sales to Back Office,
Creating new items and establish link to concern department.
Maintaining par stock in 16 outlets and controlling through preparing store issues as per Sales reduction. So can maintain increased SOH in Outlets as well Stores.
Schedule, monitor and perform monthly stock counts, spot checks and produces inventory reports .
Coordinate with Purchase department.
Monitoring receiving department in all 3 properties.
Preparing month end reports -sales report, purchase report, reconciliation statement.
Inventory Controlling of retail shops, Spa, Hair salon and produce reports to management.
