• Develop an operating budget for each of the Restaurants revenue outlets; monitor and take corrective action as necessary to help assure that budget goals are attained.
• Inspect to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met.
• Work closely with the Managers to ensure correct stock levels are available from central distribution area to assist the operational Food and Beverage team.
• Ensure strict compliance with all relevant Hygiene and Safety legislation and requirements.
• Constantly review the product range to ensure that all key quality standards are maintained.
• Ensure that suppliers deliver to stated agreements; best practices are followed and technological advances are sought.
• Participate in the food development panel that sits to drive the food offer across the estate.
• Collate and disseminate food safety alerts when appropriate and be responsible for ensuring departmental compliance with the group health and safety policy.
• Manage the external food hygiene consultant and the resulting reports.
• Work with the Security Manager to deliver an effective loss prevention scheme.
• Responsible for maintaining and helping enforce the agreed brand standards for each unit by conducting and managing monthly audit.
• Manage on-going profitability of the Restaurant, ensuring revenue and guest satisfaction targets are met and exceeded.
• Hold regular briefings and meetings with all head of departments.
• Ensure full compliance to Restaurant operating controls, SOPs, procedures and service standards.
• Closely monitor the restaurant business reports on a daily basis and take decisions accordingly.
• Ensure that monthly financial outlooks for Food & Beverage, Admin & General on target and accurate.
• Organize the Restaurant Business Plan and feasibility Budget plans (Capex-Opex)
• Evaluate the monthly P&L statement and provide an analysis of performance result.
• Finalize the operational budgets and monitor the same
• Set the target and motivate the staff to perform their level best.
• Set the standard operating procedure and check that all team members are following Procedures.
• Monitor and improve customer and staff satisfaction levels at outlet level to increase retention.
• Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards.
• Preserve excellent levels of internal and external customer service.
• Design exceptional menus, purchase goods and continuously make necessary improvements.
• Research new products and develops an analysis of the cost and profit benefits.
• Develop and implement policies and procedures for food and beverage department.
• Ensure correct handling procedures to minimize china and glassware breakage and food waste.

• Maintain appearance, preservation and cleanliness of all food and beverage equipment and facilities.

• Manage physical inventory verification and provide updated information to the accounting department.
• Responsible for the proper accounting and reconciliation of the point of sale systems and member revenues.
• Maintain records of special events, house counts, food covers and daily business volumes.
